The grapes are the finest selections from various vineyards. 70% of the grapes are destemmed, and the must is then transferred to small vats, each containing grapes from a single vineyard. These are immediately taken to the cool cellar for cold maceration, which lasts around 5 days. Spontaneous fermentation then takes place using natural yeasts at room temperature. After fermentation and a further brief maceration, the must is pressed and transferred to Burgundy barriques.
