The names of these three cuvées refer to the Philipponnat family’s ancestors: winemakers and wine merchants, suppliers to Louis XIV, magistrates and royal mayors of Ay, a city directly connected to the Crown. All three are produced from grapes that mainly come from the best vineyards of Premiers and Grands Crus in the heart of the Champagne region, with a majority of Pinot Noir. The wines used in the blending process are obtained from the first pressing and are produced using traditional vinification methods in order to prevent premature oxidation. They are aged in the cellars for three to four years.
